One Cup Pancakes - Secondary

These are the easiest pancakes to make – you don't even need scales to weigh your ingredients. All you need is a cup or a mug. As long as you use the same cup for measuring both the flour and the milk, you'll be laughing! If you use self-raising flour, the pancakes will be more American in style: lovely and fluffy and thick. Plain flour will give you thinner ones, more like European crêpes. These are great with a sprinkling of sugar and a squeeze of lemon juice (very old school!); drizzled with maple syrup and served with crispy bacon; or topped with whatever fresh fruit you've got to help you reach your 5-a-day. Try throwing a handful of blueberries into the batter mix if making American-style pancakes. Make it veggie or vegan - Simply remove the egg and milk, and replace with 2 tablespoons of flavourless oil and plant-based milk of your choice.

Ingredients

  • self raising flour 120 g
  • milk 230 ml
  • egg 1
  • unsalted butter 2 tsp
  • blueberries 100 g
  • natural yoghurt 4 tbsp

Method

  • Fill the cup with the self raising flour and tip into a large bowl. Fill the same cup with milk and pour that into the bowl too, then crack in the egg. Whisk everything together until it's nice and smooth.
  • Place a large non-stick frying pan on a medium heat. Once hot, add a small knob of butter then, once the butter has melted and starts to sizzle, add large spoonfuls of batter to the pan – you'll need to cook your pancakes in batches.
  • Wait for little bubbles to form on the surface of the pancakes, about 1 to 2 minutes, then use a fish slice or spatula to flip them over to cook for another 1 to 2 minutes on the other side, or until golden again.
  • Serve the pancakes right away with your favourite toppings – I like some blueberries and natural yoghurt.
