This is the perfect comforting dish for when you are looking for a traybake that is packed with vegetables. It's also a great recipe to use up leftovers - onion, peppers or squash could also be used.

Ingredients
meat free sausages 6 (sliced)
leek 3 (sliced)
olive oil dash
garlic cloves 2 (crushed)
butter beans 400 g (drained)
wholegrain mustard 2 tsp
soya cream 250 ml
gluten free puff pastry 1
Method
Pre-heat your oven to 200c.
Slice the sausages and leeks then add to a baking dish. Drizzle over a dash of oil and add a pinch of salt and shake to combine. Bake in the oven for 20 minutes.
Remove the tray from the oven and add the garlic and drained butterbeans, mustard, cream and 65ml water along with a pinch of salt and pepper and mix to combine.
Lay over the puff pastry sheet and push in the sides to seal the edges. Glaze with a little oil and slice three lines in the top of the pastry.
Bake in the oven for 25 minutes until the pastry is nice and golden. Then plate up and enjoy!
