Pea, Mint & Spring Onion Fritters

Bright green, crisp and served with a cool dollop of Greek yoghurt, these Pea, Mint and Spring Onion Fritters are proof that food which looks unusual can taste delicious. Children blitz peas and mint into a vivid green batter using a stick blender, then cook their own fritters until golden. It's a lovely way to explore likes and dislikes – encouraging children to try something new, and to notice how ingredients can taste completely different once they're mixed and cooked.

Ingredients

  • frozen peas 200 g
  • fresh mint 1 handful (leaves picked)
  • fresh basil 1 handful (leaves picked)
  • Parmesan 15 g (grated)
  • spring onions 6 ¼ (sliced)
  • egg 1 (beaten)
  • plain flour 25 g
  • lemon ¼ (wedges)
  • Greek yoghurt 2 tbsp
  • vegetable oil 2 tbsp

Method

Prep the ingredients

  • Put the frozen peas in the jug then pick the leaves off the mint stalks and put them into the jug with the peas.
  • Blitz the basil and peas to a chunky paste.
  • Grate the Parmesan cheese using a fine grater.
  • Cut the very dark green leaves and the hairy end off the spring onion and peel off any dried outside layers.
  • Using the claw grip, cut the spring onion into small rounds.
  • Break the egg into a small bowl and mix with a fork.

Mix the batter & cook the fritters

  • Place the pea paste, Parmesan, spring onion, egg and plain flour into a mixing bowl.
  • Squeeze in the lemon juice and mix well with the fork.
  • Heat the tablespoon of vegetable oil in the frying pan over a medium heat.
  • Use half the mixture to make two pancake shaped fritters per person in the frying pan (do this two fritters at a time).
  • After a couple of minutes, they should be golden brown on one side, carefully turn them over using a fork or spoon and cook the other side for a further 2 mins until golden brown, then place onto two serving plates
  • Do the same with the remaining mixture to make two fritters for each person.
  • Serve the fritters with a spoon of Greek yoghurt on top. Eat and enjoy!
