Ingredients
chicken thighs 500 g (diced)
red onion 1 (diced)
double cream 300 ml
cherry tomatoes 150 g (halved)
spinach 100 g
fusilli pasta 300 g
harissa paste 1 tbsp
paprika 1 tbsp
grated Parmesan to garnish (grated)

Method
Peel and dice the red onion, halve the cherry tomatoes and dice the chicken.
Cook the pasta according to the packet instructions. Drain when cooked.
Heat a glug of oil in a large frying pan on a medium heat. Add the onions and fry for 5-6 minutes until they start to soften.
Add the chicken and brown for 5-6 minutes. Stir in the harissa paste and paprika and fry for a minute or two.
Add the cherry tomatoes, double cream and season to taste with salt and pepper. Leave to gently simmer for 5 minutes.
Stir in the spinach and cook until it wilts then tip in the drained pasta.
Plate up and finish with the grated Parmesan. Enjoy!
