Packed with crunchy, colourful veg, this wrap makes 'eating the rainbow' a treat. Children practise snipping chives with scissors and peeling carrot ribbons with a swivel peeler, then layer and roll it all into a Rainbow Wrap that reveals every colour when it's sliced. It's a fantastic way to let children taste just why a varied diet matters, while learning some new kitchen skills along the way.

Ingredients
carrot 1 (peeled)
red pepper ½ (sliced)
fresh chives 5 g (chopped)
cream cheese 2 tbsp
wholemeal tortilla wraps 2
spinach 30 g
Method
Prep the vegetables
Using the swivel peeler, peel the skin off the carrot and then peel a few thin slices.
Carefully pull the seeds out of the red pepper and cut off any white pith and then cut the pepper into very thin strips.
Prepare the cream cheese spread
Using the scissors, snip the fresh chives into little pieces over the bowl of cream cheese and mix together well.
Assemble the wrap
Lay the wrap on the table, use the back of your spoon to spread the cream cheese and chive mix evenly over the wrap.
Layer the carrot over the cream cheese, then lay the strips of red pepper on top of the carrot. Lastly, lay the baby spinach leaves over the peppers.
Fold the two sides in towards each other, then using your thumbs, fold the bottom of the wrap up and over the middle, then start to roll it up tightly all the way to the top.
Cut the wrap in half on the diagonal so you can see the rainbow colours inside. Eat and enjoy!
