Sticky Chicken Soy Skewers & Stir-fried Vegetables

Coated in a honey-and-soy marinade and served over quick stir-fried broccoli and ribbons of carrot, these Sticky Chicken Soy Skewers are flavoursome and fun to make. Children practise crushing garlic with a garlic press and threading firm chicken onto sticks, then coating and cooking the skewers until glossy and golden. Its everyday ingredients also open up a conversation about packaging – how much our food comes wrapped in, and how and why we might cut down on it. You will need cocktail sticks to make the skewers.

Ingredients

  • lemon ¼ (squeezed)
  • soy sauce 1 tbsp
  • honey 1 tbsp
  • garlic cloves 1 (crushed)
  • carrot 1 (peeled)
  • broccoli ¼ (chopped)
  • chicken breast 1 (cubed)
  • olive oil 4 tbsp

Method

Make the marinade

  • Juice the lemon, then add the juice to the soy sauce and honey in a small bowl and mix well.
  • Peel the garlic clove and crush into the soy sauce mixture using a garlic press and mix well.

Prep the vegetables

  • Peel the carrot then use the swivel peeler to cut long ribbons of carrot.
  • Cut the broccoli florets off the stem and split into small even pieces. Cut the top of the stalk into small pieces to use as well.

Make the chicken skewers

  • On a chopping board, cut each chicken breast in half lengthways, then each strip into 6 small even cubes.
  • Thread three chicken cubes onto each cocktail stick and place into the soy sauce mixture, turning each stick several times to ensure it is evenly coated.

Cook the chicken skewers

  • Warm half the olive oil in a frying pan or wok then lift the chicken skewers out of the soy mixture and place them into the pan.
  • Cook the chicken skewers for 10 mins turning frequently, until firm and cooked through. Using the tongs, lift the chicken skewers onto the serving plate.

Stir fry the vegetables

  • Add the rest of the oil to the pan and stir fry the broccoli for 3-4 mins.
  • Add the carrot ribbons and stir fry for 1 minute, if it looks dry, you could add an extra tablespoon of oil.
  • Tip in the marinade and cook for a further minute until bubbling.

Serve

  • Serve the stir-fried vegetables topped with the chicken kebabs.
  • Eat and enjoy!
