Ingredients
farfalle pasta 300 g
onion 1 (diced)
garlic cloves 3 (crushed)
cherry tomatoes 100 g (chopped)
dried mint ¼ tsp
beef mince 500 g
paprika 2 tsp
tomato purée 2 tbsp
butter 50 g
natural yoghurt 100 g
Method
Cook the pasta
Cook the pasta according to the packet instructions.
Prep the ingredients
While the pasta is cooking, peel and dice the onion, peel and crush the garlic. Halve the cherry tomatoes and mix them with the dried mint.
Cook the beef
Heat a dash of oil in a frying pan over a medium heat. Add the onions and fry for 5-7 minutes until softened.
Add the beef mince, 1/2 of the paprika and the tomato puree, fry for another 5 minutes or so, until the beef is cooked. Add the cooked pasta to the beef and keep warm.
Make the paprika butter
Melt the butter in a small pan over a medium heat. Add the remaining paprikaand let it foam for 30 seconds.
Make the garlic yoghurt
In a bowl combine the yoghurt, crushed garlic and season to taste with salt.
Plate Up
Serve the pasta with a spoonful of garlic yoghurt, mint cherry tomatoes and drizzle the paprikabutter on top. Enjoy!
