This banana kiwi pancakes recipe is a good
example of a recipe which can be easily
adapted for different dietary needs. The dairy
milk and yoghurt can be swopped for nondairy alternatives; the self-raising flour can be
swopped for a gluten-free alternative flour,
and the kiwi can be replaced with any other
fruit. Makes 2 pancakes per person.

Ingredients
self raising flour 60 g
baking powder ½ tsp
banana 1 (peeled)
milk 75 ml
olive oil 2 tbsp
Greek yoghurt 2 tbsp
kiwi 1 (sliced)
Method
Make the batter
This makes 2 pancakes per person. Sift the self-raising flour and baking powder into a bowl.
Peel the bananas and mash with a fork in a small bowl, then add the milk and mix together.
Pour the bananamixture into the flour and mix until smooth.
Prep the kiwi
Scoop the kiwi out of the skins using a teaspoon and cut it into slices.
Cook the pancakes
Put the frying pan and oil over a medium heat to get hot.
Add two spoonfuls of the mixture into the pan.
Cook the pancakes until you can see bubbles over the surface.
Carefully turn them over and cook the other side until golden brown then slide onto a plate.
Add another tablespoon of oil into the frying pan and use the rest of the mixture to make two more pancakes.
Serve
Put two pancakes on each plate then top with a tablespoon of Greek yogurt and some slices of kiwi.
