Made with 100% durum wheat, these golden flatbreads are a delicious twist on the classic street food speciality from the Emilia-Romagna region. We’re packing this one with Mediterranean flavour -layering up golden halloumi, spinach and juicy cherry tomatoes, then finished with crumbled feta and a cooling drizzle of courgette tzatziki, with a hint of garlic. It’s light, salty, fresh, and a little bit indulgent, it’s a quick Greek-inspired bite that feels both comforting and vibrant.

Ingredients
courgette 1 (grated)
garlic cloves 1 (crushed)
Greek yoghurt 200 g
dried mint 1 tsp
cherry tomatoes 200 g (sliced)
halloumi 450 g (sliced)
dried oregano 1 tsp
Crosta Mollica piadina 4
spinach 60 g
feta 80 g (crumbled)
Method
Make the tzatziki
Grate the courgette with a box grater then add to a bowl with a pinch of salt. Crush the garlic clove.
Set aside for a few minutes to allow the water to drain out, then squeeze the courgette to remove as much excess water as possible.
Combine the courgette with the Greek yoghurt, garlic, dried mint and season to taste with salt and pepper.
Prep the rest of the ingredients
Slice the cherry tomatoes.
Slice the halloumi, then drizzle it with olive oil and sprinkle over the dried oregano. Pan-fry or air-fry the halloumi for 5 - 7 minutes until golden brown.
Assemble & Plate Up
Place a Crosta Mollica piadina in a hot dry frying pan for 1 minute on each side.
Then layer up your toppings - we love to start with a generous spoonful of tzatziki, then add the spinach, cherry tomatoes and halloumi. Finish with a crumble of feta and more tzatziki.
Repeat until all the piadina are assembled. Fold and serve.
