Of all of the takeaway inspired recipes I’ve created recently, my family said this was their favourite and I can see why. It ticks every box in terms of the flavour department and more importantly it’s on the table in no time at all. We are serving this fries but you can also serve this with my Singapore Fried Rice (the recipe is on the app, just search for Singapore Rice on the app).

onion 1 (diced)
spring onions 5 (chopped)
mixed chillies 3 (sliced)
chicken thighs 500 g
egg 1 (beaten)
cornflour 100 g
Chinese 5 spice 2 tsp
sunflower oil 400 ml
chilli flakes ½ tsp
sea salt 1 tsp
black pepper 1 tsp
fries 500 g
Method
Prep the ingredients
Peel and dice the onion, chop the spring onions (you’ll be using both the white and green parts), slice the mixed chillies. Cut the chicken into bite sized pieces.
Prep the chicken
In a large bowl, beat the egg and add the chicken, season with salt and mix well together. In another bowl, combine the cornflour and half of the Chinese 5 Spice.
Dip the chicken pieces into the cornflour mix, covering every side (you will need to do this in batches).
Cook the chicken & fries
Cook the fries according to the packet instructions.
You will need enough sunflower oil so that the chicken is covered when you fry it. Heat the oil in a deep pan until it reaches 185°C. If you don't have a thermometer you can test the oil by dropping a breadcrumb into it, if it sizzles right away and turns golden-brown, then it's ready to use.
Carefully lower the chicken into the pan and fry for around 4 minutes, or until it reaches an internal temperature of at least 75°C. I like to do this in two batches so as not to overcrowd the pan. Remove the chicken from the pan and drain on kitchen paper.
Heat a dash of oil in a large frying pan over medium heat. Stir fry the onion and the white parts of the spring onions for a few minutes.
Add the cooked chicken, chilli flakes, black pepper, the remaining Chinese 5 spice, chillies and green parts of the spring onion. Toss to combine and stir fry for another minute.
Plate Up
Plate up - serve the salt & pepper chicken with the fries. Enjoy!
