baking potatoes 4 (sliced)
bell pepper 2 (sliced)
red onion 1 (sliced)
chicken thighs 800 g (chopped)
garlic granules ½ tsp
Chinese 5 spice 1 ½ tbsp
cornflour 75 g

Method
Preheat the oven to 220°C/200°C fan.
Cut the potatoes lengthwise into chips, there’s no need to peel them.
Add the chips to a large baking tray and toss with a generous glug of olive oil and season with salt and pepper.Bake for 30 mins.
Meanwhile, peel and slice the onion, deseed and slice the peppers. dice the chicken.
In a large mixing bowl combine the garlic granules, Chinese 5 spice with a generous pinch of sugar and salt. Add the chicken, pepper and onions to the bowl and coat well. Add a dash of oil and the cornflour and mix well.
Take the tray out of the oven then scatter the chicken on top of the chips and bake for another 20 minutes. Check if everything is cooked through, this may need another 5-10 minutes, depending on your oven.
