Ingredients
orzo 300 g
saffron pinch
cherry tomatoes 200 g (halved)
brie 200 g (crumbled)
fresh parsley 1 handful (chopped)
Method
Method
Add the saffron to a small bowl with a spoonful of hot water.
Bring a pan of salted water to the boil, then add the saffron plus the water you soaked it in, to the pan. Cook the orzo for 10 minutes, until tender, or until it is cooked to your liking.
While the orzo is cooking, prep the rest of the dish - halve the cherry tomatoes, crumble the brie and chop the parsley.
Once the orzo is ready, drain it then return it to the pan and season to taste with olive oil, salt and pepper. Stir through the parsley, brie and tomatoes. Plate up and enjoy!
