Sunshine Fruit Shake

Sunshine in a glass, golden, fruity and layered with a berry sunrise at the bottom, this healthy shake is as cheerful to make as it is to drink. Children practise squeezing fresh orange with a hand juicer, then blitz it with peaches and coconut yoghurt into a smooth Sunshine Shake using a stick blender. Then use the recipe to talk about recycling – how all the ingredients come in packaging that can be given a new life rather than thrown away.

Ingredients

  • frozen berries 2 tbsp
  • orange 1 (juice)
  • tinned peach slices 205 g (sliced)
  • coconut yoghurt 100 ml

Method

  • Defrost the frozen berries.
  • Halve the orange and squeeze out the juice using a hand juicer. Pour the juice into a plastic jug.
  • Pour the juice from the tin of peaches into the jug with the orange juice.
  • Cut the peaches into smaller pieces using a table knife, then add these to the jug.
  • Scoop all the coconut yoghurt out of the tub and add it to the jug.
  • Blitz everything together using a hand blender until you have a smooth shake.
  • ‘Smash’ the frozen berries with a spoon, then carefully divide between the bottom of the glasses (or jam jars). Slowly pour in the blended shake to create a ‘sunshine’ effect.
  • Eat and enjoy!
